Nitrous Oxide N2O

Nitrous oxide N2O was first synthesized by Joseph Priestly an English chemist in 1775 and it soon became a popular anesthetic with dentists who found that while it dulled their patients' pain it left them conscious enough to be able to respond to verbal commands. However in recent history the gas has been used very successfully in the chargers used on whipped cream dispensers to create culinary delights both at home, in restaurants and coffee shops. The nitrous oxide N2O is contained in small cylinder known as a whippet or charger that holds 8 g of the gas that can easily be inserted into a whipped cream dispenser.

The cylinder is a standard size and measures 2.5 inches long with a rounded bottom and a foil capped neck that is inserted into the cream dispenser. There is a piercing device that lets the gas into the dispenser and it usually takes two or more chargers to fill the unit. Once the nitrous oxide N2O gas is discharged into the cream dispenser it mixed with the cream much in the same way that CO2 mixes with soda. There is one healthy advantage to using N2O for a propellant with whipped cream; it acts as an antibacterial, which means your pressurized cream will stay good for up to 2 weeks as long as you keep it stored in the refrigerator. No other gas that is considered food safe is capable of this. Nitrous oxide N2O mixes easily into the cream and unlike pressurized air or CO2 will not cause the cream to oxidize while it sits in the refrigerator or in one of those cans in the grocery store.

However if you want the cream to have the right consistency and look right after is comes out of the dispenser you must use heavy cream that has a fat content of not less than 28%. If you use anything less it will not attain that fluffy whipped cream look that everyone expects nor will it hold together long enough. The idea for a pressurized whipped cream dispenser using Nitrous Oxide N2O as the pressurizing gas originated in Europe and today the best quality N2O chargers are still made there.

Thanks to the rigid standards that are applied to all European food products the gasses in their chargers are considered the purest in the world. Recently there have been some cheaper imports flooding the markets from China but the quality of both the container and the N2O inside. While there are many different artificial creamers in a spray can work well there is nothing like the real thing dispensed from a nitrous oxide N2O powered whipped cream dispenser to make your desert or coffee into something special. If you are looking for a place to get genuine European N2O chargers you need look no further than Cream Right.
