Buttermilk Pancakes

There is nothing quite like buttermilk pancakes, I have found that the best method to make pancakes is by using a whip cream dispenser, which makes them extra fluffy and delicious and also a much quicker and cleaner, clean up.

  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray ( for griddle)

Or try the Flappin Jack recipe, but try using 2/3 milk we find it to work better. Once you have mixed the recipe ingredients together put it into a whipped cream dispenser and add 1 Nitrous Oxide charger and then dispense onto a hot griddle, serve with your favorite maple syrup and melted butter!

I thought I could use my isi siphon to do this, but I did it a few minutes ago BEFORE seeing your recipe… the results were awesome, although the technique and ingredients were SLIGHTLY different… what i used was… some all purpose flour, whole wheat flour, skim milk, cream, eggs, greek yogurt, fresh squeezed lime, baking soda, baking powder, home made vanilla extract, salt, raw brown sugar, canola oil…. mixed with immersion blender until the consistency of a vanilla milkshake.

I put about a pint of that into my siphon along with one canister of C02 (not N02), and with the black cast iron skillet on at about 250f or so i dispensed on a thin layer of butter (thin enough that you can wipe with a paper towel)… and the results were absolutely grand.

We just made this recipe, testing out unadulterated vs. isi pancakes, and we found that the recipe, unadulterated, made for great pancakes!  In other words, your recipe, ensuring that you use the batter immediately and use enough butter, created super fluffy pancakes, more than twice the height of the isi pancakes.  Still, the isi is my absolute go-to for whipped creams, quick infusions, and adult carbonated beverages :).
