Honey Mustard Sauce
– 2 tablespoons mustard
– 4 tablespoons honey
– 1/2 cup mayonnaise*
– 1/2 cup sour cream
Mix ingredients together and add pour into a 1 pint whipped cream dispenser, Charge with 1 N20 whipped cream charger, and its ready to serve. This recipe is probably the best recipe for honey mustard I have found, experiment with your favorite mustard!

2 large egg yolks*
4 teaspoons lemon juice
1 teaspoon salt
2 teaspoons water
2 cups oil
In a large bowl, whisk together the yolks, lemon juice, salt, and water. Slowly whisk in oil. Pour mixture into a 1 pint whip cream dispenser Screw on one N2O cream charger. Shake vigorously. Test consistency. Serve. Chill remaining mayo.
Halve the ingredients for a half-pint whip cream dispenser.

Fruit is delicious as it is, but have you tried carbonated fruit? You have always been able to do this using dry ice, but that is never usually readily available and hard to come by. Carbonated fruit is delicious,
really fun and pretty easy. All you need is a soda siphon or whipped cream dispenser and C02 cartridges. The Co2 cartridges are the same size as the N20 cartridges so there will be no problem using C02 in your whipped cream dispenser — here are the steps!
- Fill the whip cream dispenser (or siphon) with fruit
- Screw on top securly
- Charge with one soda charger (two if you have the 1 L whipper)
- Leave in for a few hours
- Release pressure with valve – ( don’t forget this step!)
- Unscrew top and serve!
It’s a fun way for kids to eat fruit, and also a great decorative added for mixed drinks or garnish on top of desserts!
There is nothing quite like buttermilk pancakes, I have found that the best method to make pancakes is by using a whip cream dispenser, which makes them extra fluffy and delicious and also a much quicker and cleaner, clean up.
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- cooking spray ( for griddle)
Or try the Flappin Jack recipe, but try using 2/3 milk we find it to work better. Once you have mixed the recipe ingredients together put it into a whipped cream dispenser and add 1 Nitrous Oxide charger and then dispense onto a hot griddle, serve with your favorite maple syrup and melted butter!

Lemon-Infused Extra Virgin Olive Oil
500 milliliters (1 pint) high quality, fruity olive oil
45 grams lemon zest (from between 6 and 9 lemons, depending on size)
2 N2O Cream Chargers
Put the olive oil and lemon zest into a ½-liter Whip Cream canister and secure the top. Charge with 2 N2O Cream Chargers. Let the infusion sit for 3 minutes in the canister. Pour out and let sit for 5 more minutes for flavor to fully develop.
A couple weeks ago I came back from a trip around Europe on my honeymoon, one of the countries we went to was Italy. We went to a few cities in Italy were we had delicious food – the pizza was delicious the pasta was fantastic… But the cannoli was memorable! I thought I had the best cannoli in Boston, until we went to Palermo(Sicily, where the cannoli originates) where I had the most delicious cannoli I’ve ever eaten! Try this recipe for cannoli filling, It’s very good! I’m not sure I can say it beats the flavors of the cannoli we ate at the outdoor caffè in Palmero, but its close! A great tool that can be used to evenly place your cannoli filling is the ISI “Fill It”
1 (8 oz.) ricotta cheese
1 c. regular whipping cream
1 tsp. vanilla
1/2 c. confectioner’s sugar
1/4 c. grated orange rind (fresh, ground or orange rind in jar to garnish) ( optional)
1 c. mini-chocolate chip morsels to garnish
Add ingredients into your whipped cream dispenser (except the chocolate chips and orange rind for garnish) Put the top on the dispenser and shake ingredients well. Dispense one whip cream charger into your dispenser and shake again.
As most of you already know, whip cream dispenser are used for more then just whipped cream. We came across this recipe from Flip Burger Boutiques, making fried pickles, using an ISI whip cream dispenser (for the batter). Not only are they delicious( having eaten them) But it’s also another way to extend your own culinary achievements – your whip cream dispenser isn’t just for whipped cream anymore! Use your ISI whipper to make batter for fried chicken, onion rings, the list goes on!
Flip Burger’s Fried Pickles
1 cup bread and butter pickles, cut thinly (about 1/4 inch)
1 teaspoon dill, minced
1 cup tempura batter (See below.)
1 cup all-purpose flour salt and pepper to taste
Place pickles into mixing bowl, straining first (Note: You may reserve liquid for other pickling uses.)
Toss pickles into all-purpose flour.
Shake off excess flour and place in clean, mixing bowl.
Spray tempura batter from metal iSi canister to pickles.
Toss pickles in bowl until they are thoroughly covered.
Shake off excess tempura batter and drop into fryer set at 325 degrees.
Fry until golden brown and crisp.
Remove. Place pickles into clean mixing bowl.
Season with salt and pepper.
Add dill while pickles are still hot.
Before serving, place pickles onto paper towels for 30 seconds to a minute.
(Note: A kitchen tool frequently used at Flip, an iSi is a professional cream whipper that uses an N2O canister of nitrous oxide. Its use is consistent with Flip’s goal of incorporating a science aspect into the restaurant’s culinary endeavors)
1 cup all-purpose flour
1 cup rice flour
1 cup light beer
3/4 cup vodka
1/4 cup soda water
1 teaspoon honey
Beginning with dry items, combine all ingredients in a mixing bowl.
After adding in liquid components, mix all ingredients together.
Pour into an iSI canister; screw top tightly.
Insert charge; let stand 10 minutes.
