Ripe peaches (peeled and diced)

Fresh strawberries (hulled and diced)

Ripe peaches (peeled and diced)

Powdered sugar
120 ml
Heavy cream (cold)
2.5 ml
Vanilla extract

Fresh strawberries (hulled and diced)

Instructions

In a saucepan, cook the strawberries with 1 tbsp sugar and lemon juice over medium heat for 5–7 minutes, until softened and slightly syrupy. Let cool.

Mash the cooked strawberries slightly, then spoon into the bottom of serving glasses or verrines.

Blend peaches with 2 tbsp sugar until smooth. Strain to remove any solids.

In a mixing cup, combine peach puree, cold heavy cream, powdered sugar, and vanilla extract. Stir well.

Pour mixture into a CreamRight dispenser. Charge with one Ultra-Purewhip N₂O charger, shake vigorously, and chill for 5 minutes.

Dispense the peach mousse into each verrine over the strawberry compote.

Garnish with mint leaves and a slice of fresh peach or strawberry, if desired.
